Cornbread

You know, one of my cooking deficiencies is cornbread. I need something to go with the down home stuff I cook.

I was thinking about how cornbread is to country food what rice is to asian/indian/mexican food.

I thought about it though. Cornbread is like beer except without a buzz,, i mean, it has no taste value (beer tastes horrible, but yaaaa know,, :emlaugh: ), pretty much nothing redeeming about cornbread, especially the kind you put in the oven like a cake. at least the kind you fry in the pan is crunchy.

The only cornbread that is remotely tasty is that Jiffy mix  stuff that is sweet. :smh:

Is cornbread really that great(or tasty) a food item?

You must lead a sheltered life.

Jiffy ain't cornbread...it's something else.

At any rate, I have 9 different cornbreads that I make depending on what I am serving it with.

Cornbread is a delicacy. But rice is as much to a Geechee as it is to any Asian. ;)

Dang-it, you've JUST reminded me that I left a piece of cornbread in my desk at work on Thursday from The Blues Cafe. :xeye: :retard: Seriously. :( :smh: :|

Bart cornbread is great. Make it from stratch and add a pinch of sugar and it great. What the heck you mean it has no taste.:dead:

You haven't had my grandma's cracklin cornbread. Man it'll make you slap somebody:). Hell you don't even need nothing to go with it.

Jiffy  i'm so ashamed. :shame:

Rice true, i forgot about Geechees! :lmao: my college roomie was from Charleston,, we were never without rice. red beans and rice was a fine meal for us esp once we was off the yard and ran out of money before the 1st of the month.

you know, i have never had cracklin cornbread. my thought was that it was hard to chew like cracklins so I never tried it.

you gonna have some visitors (either ants, roaches, mice are all of the above) come Monday.

See that's the thing,,, I know of nobody who added sugar to cornbread growing up. that's why I'm like, cornbread is so over-rated. basically you eating corn meal filler! :dead: i'm going to try some variations to pep it up though.

I must admit, I am a jiffy man but ain't nothing like homemade cornbread. No taste?

Neva had cracklin cornbread.

Cornbread with no taste? If you know how to make it then it's a wonderful thing.

yeah, the only cornbread I ever had with taste(there have been a few times at church or at A&T and what not) was, of all places, LOS ANGELES(Hollywood/Alta Dena,, that popular black place on the harbor, forget the name) for crying out loud at Roscoe's Chicken & Waffles! :shame: YOU GOTTA BE KIDDING ME! It was like course pound cake, too soft and fall apart too easy, but MAN it was good wit dem canned snap beans with bacon in them. :emlaugh: :shame:

Add a little diced onion and bell pepper, shreeded cheese and a diced jalepeno and mix it into your cornbread and cook it....mmmmm.......mmmmmgood. If you really know how to cook cornbread then yes it can complement any vegetable. Jiffy mix I love, but my mom and grandma think it's a sin to cook jiffy mix. They make it from scratch.

I was just about to say - most country people MUST have cornbread w/their "peas and snap beans." :emlaugh: I like it hot out of the oven w/real butter! I'll also eat it w/milk (sweet,) but haven't done so in ages. My mama just mentioned to me Saturday how she wished she had some cornbread & buttermilk! :vomit:

That's exactly what they had at Roscoe's,, plenty of butter, but the cornbread flaked apart spreading the butter on it!

You know, there are three things in my household growing up that I absolutely would not and do not to this day eat:
  1. Chittlinz:sick:
  2. Raw oysters slurped out the shell :scared:
  3. Buttermilk and cornbread (although I love buttermilk pancakes)
  4. Fried green tomatoes:sick:
  5. Souse(hog head cheese):vomit::vomit:
  6. Liver  (although I've been tricked a few times when it was smuthered in thick french onion gravy)

YES! THAT'S IT! Man, that place was ok for Cali, but you talk about overrated, oh my goodness. :dead:

I didn't like it all that much either and I'm from cali (Pasadena, home of the rose bowl) There is another place called M and M's pretty good, I just didn't like the sweet tasting greens, but everything else is pretty good. They have a couple of spots in LA and in Pasadena.

STILL DON'T LIKE HOT WATER...NOW THAT HAS NO TASTE!!!!

i put sugar in my fried corn...

but anyways, corn bread it da shat if made right. i hate jiffy, if it aint from scratch, it aint cornbread.

No#3 was my isht. I would not eat vegetables so that was all I had to eat. Sprinkle some sugar in that ish and it was on. Now I eat all vegies and I mean all.

I'll eat liver now if it's smother in gravy. But I haven't had it in years. I just don't cook it.

I seem to remember an M and M's, may have been there also. Sweet greens I have never had.

I lived in downtown Pasadena and worked at JPL. :) volunteer tutored a lot at John Miur(sp) High School. Used to go to that Roscoe's north of downtown Pasadena. (in Alta Dena?)

yeah hot water cornbread will win no food tasting contests that's for sure; :dead: i think it may be a variation from "sluesh" that was eaten by southern soldiers with limited provisions during the civil war (which they probably got from what slaves ate. it was corn meal and bacon grease rolled into links and fried/roasted over camp fires. :lecture: :read::|).

I used to put sugar on rice (with butter) and in grits sometimes, but the ole timers used to say, "stop dat. you gonna get diabities like your ____." so I was pretty much scared *****less when it came to putting sugar on anything other than cereal. :scared:

I do that, but not too much.

Bart: Perish the thought of sugar in my beloved grits!!!! :headphone Concerning veggies, my mom said people used to put sugar in them if the were bitter to kill the taste.
