Question for the TSPN grill masters

Thanks mane.

Oh yeah...dude at the Grill Store on Jefferson and Lobdell told me to rub some mustard on them. Mustard acts as a tenderizer. I tried that on one slab. Probably why it was kinda salty. I heard about soaking them in some beer or apple cider over night as well. Next time I go there I gotta get this grill called the Big Green Egg.

The store owner was smoking 2 hams in that thing. MAN!!!!

We use mayo on our briskets out this way. :read: It seals in the juices after the 350 deg heat gets it. We did a total of 15 @ one time for the fam deal last Sat. Also, thumbs up on the vinegar "mop" (along w/ salt/pepper/lemon - hull and all :read: ).

Glad it turned out nice for ya' Jax. I couldn't offer any advise that already was stated previously.

If you bought anything more than this, you wasted your money. The Weber 18.5 inch classic black kettle grill is all you'll ever need.

Deuce,
I agree. I like Weber grills. (and their seasonings too  ).
Their grills aren't expensive at all, but they'll last awhile.

I haven't tried their seasonings. I'm gonna have to look into that.

But yeah, they do last a long time. Up until recently, I still had one of the old ones that had the wooden handles on them :emlaugh:

WOW...that is exactly what I bought. I was in the gym and some of the guys in there recommended a Weber. I went to homedepot.com and read the reviews and they were ALL good so I went to get it. This one dude says he has 3 Weber's because he has to grill his meat separately... (like he can't grill his pork and chicken on the same grill without people beothching).

1. I got the grill I wanted
2. ...but after that, we went to the grocery store and my wife in there talking about what all she gonna grill (Im REALLY gettin mad at the thought of her using the grill.... why? I still don't know. Yes, I do.... but it's kinda childish so I won't say it here.. lol)
3. We bought some Turkey Hot dogs but I didn't grill em.... sorry --so no pics of the two weinies.
4. Grilling was boring.
5. I know I am smart as hell but I was like, "okay, it's gotta be more to it that this". Either grillin is easy or that dayum Weber is the schitt!
6. The grill came with instructions on how much charcoal to use (I bought the kind of charcoal that does not require lighter fluid), how long to cook your meat (by the way, I only did turkey burgers and pork ribs), when to flip it, and err thang else. I had nothing to think about.
7. Nothing burned or even came close to it. I was expecting some "drama" from flames, etc.... NADA. I was bored to death. Eventually, I was just like fugg it!... let me leave it on here a LONG time and see if it burns... lol
8. The turkey burgers were supurb. The way they plumped up on the grill and all the juice still inside.... :licky:
9. My ribs were tender but they did not taste smokey enough for me. Don't get me wrong, they were good and very tender but I was expecting them to taste like Mom's and I missed out on gettin that "flavor".
10. I didn't make up my own bbq sauce. I just used some K.C. Masterpiece.
11. Clean up was easy. A little soapy water got my grill rack back to lookin like new. I think I might do some steaks and salmon this weekend. :D

What I didn't do
-I think you all told me to fire the grill up two days in advance. I was too excited to do that but please tell me the purpose of that anyway.
- I did NOT marinate my ribs. I was gonna let them sit overnight but once I fired the grill up, I decided to practice with the turkey burgers to get a feel for the temperment of the grill. It was so easy that I just couldn't wait to put the ribs on. :D

Now if you're really serious . . . . . . this bad boy is the Weber Ranch Kettle, and its over 40 inches across (that's almost three and a half feet), and you can feed the whole neighborhood with this mug.

And it costs a mere $1,100 . . . but I'm sure its worth every penny. :emlaugh:

Big ups to your wife!!! I did all the grilling Monday while my husband was on the golf course... Then he comes home right when I'm finishing talkin' bout "is the grill still hot? I got these chops I want you season up and put on there for me....":upset: Then he commences to tell me how to do it.. I'm like, mane I was doing just fine by myself... Geesh!

But.....No pics of weinies....:(

preciate it mane. The ribs Lemoine bought were easier than the ones I did at the crib.

Thanks for all the tips fellas.

Shaw...you was right about the beef ribs. NO MORE! The rub I made made them a lil too salty. I got some hickory chips and smoked them as well. I had to enhance the bbq sauce with a lil brown sugar to counter the saltiness. Came out good. preciate mane. I bought a slab of John Morells pork ribs.
Those came out a lil better.

Dacontinent...I kinda followed your advice on the time. Good lookin out.

JR...didn't boil the ribs. I boiled the chicken then smoked them. MAN! Talk about tender! Thanks.

Yeah i salt to taste and don't add it to my dry rub. I put salt directly on the ribs. Dry rub consist of brown surgar dark and light, sugar, garlic powder, paprika, onion powder and a few other secrets. rub them down good and let them sit.

Once the ribs are on the grill. I chop up onions and peppers paper thin and use the left over juice from the marinade to make a homemade suase. A few other speical spices and all the food is gone..LOL

I don't put sauce on the ribs either. It's used as a dipping suace if you want it.

Uhh TP you are not childish for "hatin'" on your wife touchin' the grill. Something about a woman, grills and fire just don't add up. Us men folk must keep some things sacred.

Oh the Weber grill is a very good grill.

It seasons the grill. :read: Over half of the "smokey" flavor you taste in meat comes from the actual physical grill itself (the aroma of it, etc) when it's hot. Unless you're smoking meat on the ground (pit in the ground). :read:

This is a grill my cousins just took delivery of last week. They paid 15K $ for it and it had to be seasoned before it was used last Fri night/Sat morn. We fired it up all day Tuesday and Wednesday w/ nothing but post oak. I had to do the exact same thing for a big pit I purchased a few mos ago. :)

Cast Iron takes on that seasoning well. Also TP you purchased a store bought grill mass produced. So you have to burn off that new smell and chemicals they use to paint that bad boy..

Also when you cook ribs once you're happy with the color let them sit on the cool side of the grill and close all the vents.Just let them smoke for an hour maybe two. They will get this nice red smoke ring around them..

What I have is a REAL grill when you don't know what you doing and you grillin for two people.

Also I see some of you use foil on the rack. When do you know when to use it?

Shaw, I might try to make a rub this weekend. I was just trying to get the basics down.
